Changhyeon Susan

Changhyeon Susan is a seafood restaurant in a back alley near Munhwa Hospital in Beomil-dong, Busan. Its signature dish is sea bream yubiki, made by briefly blanching the fish in boiling water so the skin keeps a chewy texture. The restaurant runs entirely on reservations, and plates of pufferfish skin muchim and Gajami Sikhye are refilled whenever they are emptied. The space is small with tables placed close together, so sound carries loudly inside.
