Phở Sướng serves beef pho in an alley in Hanoi's Old Quarter. The broth is clear and light brown, like galbitang, and comes with fully cooked beef, brisket, or a special topping, with a mild cilantro note. Around 7 a.m. there were seats left, and the broth is served in a large pot with meat layered under the noodles. Smoking during cooking and serving, and a steel scrubber found in the noodles, are hygiene drawbacks.
