Cà Phê Hợp Tác 89 is a small art cafe in a Hanoi alley, set slightly away from tourist areas, that serves egg coffee. Its signature egg coffee has a strong flavor where the sweetness of egg meets the bitterness of coffee. The owner has made coffee for 15 years and prepares three eggs in front of you, placing them in a glass warmed with hot water. There is no air conditioning and not many seats.
