Ong Ngoc Cafe is a vegetarian restaurant in Seogyedong, Seoul. It serves vegan pho made with vegetable broth, soybeans, and tofu, with the broth simmered at low temperature from onion, radish, herbs, mushrooms, and dried medicinal herbs. Cilantro comes in the vegan pho by default, so you have to ask for it to be left out when ordering if you do not want it. The broth is made without animal ingredients instead of beef bone, brisket, or sagol broth, so it lacks the gamey smell typical of meat broth.
