Haebaragi is a samgyeopsal (pork belly) restaurant in the basement of Yeouido Department Store in Seoul, serving wine-aged pork belly and kimchi stew. Thick cuts of pork belly aged with bay leaves are seared at the table, then staff cut them and grill them on the griddle, with lettuce salad and sundubu (soft tofu stew) served alongside. The restaurant offers snowflake soju, frozen soju struck to a slush-like texture. In the evening, waits run from 20 minutes to an hour, and the tightly packed seats are cramped with poor ventilation.
