Ramen Nagi is a ramen shop in Shibuya, Tokyo, a short walk from Shibuya Station, serving tonkotsu ramen made with pork bones and niboshi ramen. The tonkotsu broth is simmered from pork bones for a strong savoury flavour and paired with very thin noodles, while the niboshi ramen uses more than 20 kinds of dried anchovy. At the ticket vending machine, you choose your ramen and then specify noodle firmness, broth richness and spice level. The broth is on the salty side.
