Zhēnglóng Fāng is a Beijing-style dumpling shop in an alley next to Guangfu Market in Taipei. Its guotie are pan-fried to order, giving the wrappers a crisp texture, and the mixed xiaolong set brings xiaolongbao and shumai together. The owner hand-folds the dumplings in the shop and fills them densely with pork, and by around 4:30 p.m. the fried dumplings have sold out. The sanlatang has little solid content and a mild taste, so vinegar or pepper has to be added.
