Staff pre-sear the tenderloin, chuck flap, and beef tongue and cook them for diners, with scallion rice and doenjang jjigae on the side. Arriving without a reservation can mean a wait, and in the evening guests put their names on a waiting list. The meat is good, but the price is high.
