Udon Shinbori serves Fukuoka-style udon near Yoyogi Station in Tokyo. It offers mentaiko, butter, and parmesan cheese udon along with zaruu udon, and the noodles are made in-house and boiled one bowl at a time. Even right after opening, waits of several tens of minutes are possible, and lunch waits run about 30 minutes, with counter and table seating available. Payment is cash only, and the udon and tempura are on the salty side.
