Protocol is a working cafe in Yeonhui-dong, Seoul, that serves drip coffee. The drip method is the focus, bringing out the aroma and flavor of the coffee. The space has books and classical music, so many guests read or work alone. A wait forms even on weekday afternoons, and the music volume is on the loud side.
