Chilseong Dol Gopchang

Chilseong Dolgopchang is a restaurant near Pusan National University in Busan that serves Hanwoo gopchang (grilled intestines) and gopchang jeongol. Staff grill the daechang (beef large intestine), sochang, makchang (beef abomasum), and yeomtong at the table, and after the jeongol they make fried rice with the remaining broth. The restaurant is nearly full even before 6 p.m., and the number of customers creates a wait. Tables are close together and there is no ventilation, so the interior fills with smoke.
