Gaeum Makchang Oncheonjang Branch

Gaeum Makchang Oncheonjang is a neighborhood makchang (beef abomasum) restaurant in Busan that serves raw makchang. The raw makchang is par-grilled before serving, and staff grill it at the table; it is chewy and rich without gaminess. The dining room has eight round tables seating four to five people each and a self-service side dish corner, and customers crowd in enough to create a wait around 6 p.m. Water must be drawn from a water purifier, which is inconvenient.
