Kishimoto Shokudo is a restaurant in Okinawa that has been open for over 100 years and serves Okinawa soba and fried rice. Its signature dish is soba with pork in a katsuobushi broth, and fried rice is sold alongside it. The seating area holds about seven or eight tables, and a visit at 1 p.m. involved a wait of around 10 minutes with tables turning over quickly. The noodles are firm and snap apart, which is divisive among people who prefer soft noodles.
