Gyoza Taizou is a small dumpling shop on the second floor of a building in Kyoto, with a counter that seats nine to ten people. Order the regular gyoza or shiso gyoza and they are wrapped and grilled to order, giving the thin skins a crispness like grilled boiled dumplings. The gyoza come eight at a time, and the chef makes them from scratch in front of you. If you miss the first seating, you wait at least two hours.
