Bonjeom Choedae Pojip is a restaurant in Seoul that serves pork galbi, pork skin, and galmaegisal. It grills salt-seasoned meat and pork galbi over charcoal, and the soy-marinated pork skin is simmered in chojang until it bubbles. The pork skin needs to be flipped more than ten times on each side to become chewy, and one serving is 200 grams. Ventilation during grilling is not clean, so the smoke stings the eyes.
