Heki is a tonkatsu restaurant about 100 metres from Mangwon Station Exit 2 in Seoul. Its signature hirekatsu is made with aged pork tenderloin in a thin, crisp coating and served with salt, wasabi and truffle oil. Rice and soup can be refilled, and the salt, wasabi, tonkatsu sauce and truffle oil are used to vary the flavour. Waits are long, with cases of 100 to 120 minutes at 40 parties ahead.
