Ramen Yamachan is a shoyu-based Jiro-style ramen shop on the second basement floor of the Osaka Ekimae Dai-ni Building in Umeda, Osaka, a one-minute walk from Kitashinchi Station. The standard 200 grams of noodles can be increased by 50 grams at no charge, and customers choose the amounts of garlic, back fat, and vegetables when ordering. The shop has only counter seats, and a line forms around the 5 p.m. opening. The shoyu broth comes with a mountain of bean sprouts, thick chewy futomen noodles, and a large piece of chashu.
