Siprihyang is a charcoal-oven dumpling shop in Incheon's Chinatown. The dough is aged for a day, filled with meat and vegetables, then stuck to the inside of an onggi charcoal oven and baked for seven minutes; the shop sells meat dumplings, sweet potato dumplings, sweet pumpkin dumplings, and gonggalppang. Because everything is baked in batches, you have to wait when the dumplings run out, though the line in front of the shop moves quickly. The gonggalppang is on the hard and chewy side.
