INSTEAD is a wine bar in Itaewon serving oysters, shrimp crudo, and tomahawk steak. Wines can be chosen on the chef’s recommendation. The owner, who has lived between Shanghai, the United States, and Korea, began the bar with the idea of sitting comfortably and enjoying the meal. The kitchen is open, but food is slow to arrive, with two pasta dishes taking two hours.
