Izuu

Izū is an old sushi shop in Kyoto that serves traditionally made mackerel sushi and Japanese-style sushi. Its signature items are sabazushi, mackerel laid over rice seasoned with vinegar, and makizushi. A menu lets diners compare sabazushi made yesterday with sabazushi made today, and the yesterday batch tastes more matured. The mackerel flesh is on the thin side.
