Hagakure Udon

Hagakure Udon is an udon shop in Hakata, Fukuoka, serving soft-cooked noodles with meat and burdock toppings. Its signature dish is meat and burdock udon, made with beef broth, fried burdock, and table condiments including shichimi. The shop fills up and draws a line at opening, but turnover is fast and food comes out quickly, with seating sometimes at counter tables facing an open kitchen. The noodles are not chewy like Sanuki udon but soft, as if cooked through, which divides opinion.
