Unagi Hitsumabushi Bincho is on the 11th floor of the Mitsukoshi Ginza new building, near Ginza Station. The hitsumabushi is served as eel over rice divided into four parts: eaten plain, with scallions and wasabi, and with dashi poured over it as ochazuke. Orders are taken while you wait, so food arrives quickly after you sit down. Without a reservation, the wait runs over 30 minutes.
