Ginza Tsukiya is a ramen shop on the 6th floor of Ginza Six in Chuo City, Tokyo, serving clear tonkotsu ramen and mentaiko rice. The tonkotsu broth is transparent and light, with thin noodles, and small plates of motsu and draft beer are also available. On Saturday lunch, the wait to get in runs about 25 to 30 minutes. The soup is light, so those who prefer rich tonkotsu will be disappointed.
