FOLKLORE is a small bar in Tokyo serving cocktails based on Japanese sake and soju, located under the train tracks at Hibiya Okuroji. The sake omakase comes in three- or five-glass options, with cocktails using seasonal fruit, tea, coffee, and sansho pepper, plus a snack of smoked radish with cream cheese. The bartender asks about your preferences to match the drinks and shows and explains the sake used in each glass. With only about 10 to 12 seats, walk-ins may have to wait.
