barEvans is a jazz bar in Tokyo that serves cocktails, whisky and bourbon. The owner-bartender, a Bill Evans fan, chooses the music, and guests can smoke cigars while drinking. Early in the evening conversation is one-to-one, and after 11 p.m. local customers arrive and order by describing their preferences rather than using a menu.
