Hongine Hoetjip in Namsan-dong serves yellowtail and assorted hoe, a raw fish platter, along with seafood side dishes. The staff explain the cuts of a 13kg yellowtail and bring out seaweed, garlic soy sauce with sesame oil, and wasabi, plus maeuntang, a spicy fish stew made by boiling the bones for hours. The restaurant opens at 5 p.m., and customers crowd in around 6 p.m. Rooms require a reservation in advance, food tends to come out late, and the maeuntang is divisive.
