Gaio Guksu

Gaio Guksu is a noodle shop near Gusan Station in Eunpyeong-gu, Seoul, serving janchi noodles, buchu noodles, bibim noodles, and jjolmyeon. The buchu noodles come in a rich anchovy broth topped with a tall mound of seasoned raw chives and garnishes, and portions are ordered in three sizes: diet, regular, and extra large. A line forms in front of the shop before it opens, and the small space means waits can run up to an hour. The generous amount of raw chives on top makes the noodles difficult to eat.
