SHIN NIPPON（シン・ニッポン）

SHIN NIPPON is a sushi kaiseki restaurant on the fourth floor of a building in Amerika-mura, Shinsaibashi, Osaka. It serves a creative omakase that mixes traditional sushi with techniques from other cuisines such as Italian, alternating appetizers and sushi and finishing with soup. The composition changes each time based on the day's ingredients and the chef's judgment, and the cooking happens in front of the counter. Pink and purple LED lighting and futuristic art panels are prominent, so it feels unfamiliar to anyone expecting a traditional sushi restaurant.
