Sukseong Hoejang

Sukseonghoejang is an izakaya near Samseong Station in Gangnam-gu, Seoul, serving aged hoe and Japanese-style courses. The aged hoe comes with ganjang gejang innards, alongside smoked croaker, yellowtail, and fried monkfish fillet. Reservations are made through CatchTable, and walk-ins for the omakase wait a long time. The second-floor dining room is cooled so strongly that it feels cold even in a heatwave, and the venue does not carry regular soju, so ordering alcohol is required.
