Sushi Mitsu serves omakase sushi in Fukuoka, entered through a hidden space inside Cafe Mitsu. The shari uses red vinegar, topped with sardine, tuna, and sea urchin, and the sea urchin course comes with a generous serving of uni. A sliding door behind the Cafe Mitsu entrance leads in, and a large screen is inside. The chef prepares everything alone, which creates gaps between courses, and without Japanese, communication is difficult and foreign diners can feel left out.
