Jang Tuna

Jang Chamchi is a tuna restaurant in Busan where the owner slices the fish to order. The tuna is served by cut, with a firm texture from being only partly thawed, and the meal ends with meongge bibimbap. Sitting at the bar means the owner brings the food and refills the tuna on his own near the end of the meal. The tuna is sometimes still too frozen, so the thawing is uneven.
