Hikusoba

Hikusoba is a soba restaurant near Busan City Hall Station serving cold and hot soba, udon, and katsu sets. The zaru soba comes with chewy noodles and a tsuyu broth that is not salty, while the modum katsu set holds donkatsu, fish katsu, and shrimp katsu together. Orders are placed at a kiosk at the entrance, and seating is at two- or four-person tables in a wood-toned room with full-length windows, which also makes it easy to eat alone. It gets busy enough at lunchtime that a wait forms.
