The hanbang nurungji tongdak is roasted for two hours over 400-degree oak wood fire. Beneath the chicken, glutinous rice is laid on a stone plate to make crispy nurungji, and pa kimchi and salad are served alongside. The chicken is roasted rather than fried, so it has less oil.
