Ajito Ramen

Ajito Ramen is a ramen shop in Taipei's Datong District that serves spicy tantanmen, tonkotsu ramen, and chicken paitan ramen. The tantanmen lets you choose the spice level, noodle firmness, and toppings such as onion or scallion, and its broth is a little spicier than Shin Ramyun. On weekday evenings after 7 p.m., you wait about 15 to 20 minutes and order at a Chinese-language kiosk, and staff sometimes explain the menu in English. The shop has only bar seating, so it is somewhat cramped, and credit cards are not accepted.
