Horumon Chiba

Hormone Chiba is a gopchang restaurant in Kyoto that grills beef offal by cut. The one-person course serves salted grilled items and seasoned grilled items in sequence, then finishes with a choice of udon or soba. Dinner starts at 5 p.m., and the waiting list opens at 4 p.m.; staff grill the meat in front of you and explain each cut. Seating is cramped, so it is hard to seat a large group together.
