Flavio al Velavevodetto is a restaurant near a subway station on the outskirts of Rome that serves traditional Roman pasta and braised dishes. The carbonara comes with plenty of guanciale, and coda alla vaccinara and cacio e pepe are also on the menu. Roman-style artichoke stew is on the menu as well. In the carbonara, the cheese melts over time and the saltiness becomes stronger.
