Aji Ramen

Aji Ramen is a restaurant in Paris that serves tonkotsu and duck ramen alongside Shanghai-style xiaolongbao. A woman from Shanghai folds the xiaolongbao in front of customers using a method she has practiced for over 40 years. The ramen broth is on the lighter side.
