Takaesu Soba

Takae Susoba is a noodle shop in Urasoe, Okinawa, serving yushidofu soba and soki soba. The menu offers four options — tofu, soki, nakami (pork offal), and plain soba — in large, medium, or small sizes. Lines form often, and the yushidofu soba sells out early in the day. The parking lot next to the shop holds more than ten cars, and the noodles are firm and grainy.
