Inaka Kosetsuichiba Minami-ten is an Okinawa soba shop in the alley behind Makishi Public Market. Its signature dish is soki soba, topped with pork cartilage cooked until tender, served with a clear, light broth and springy noodles. The shop opens at 10 a.m. and is run by a female owner working alone, so food comes out quickly, with payment made in advance and water and tableware self-service. The menu is in Japanese only, which makes ordering difficult for those who do not read Japanese.
