Mudaepo Ramen in the Imamiya-Ebisuhonmachi area of Osaka serves tonkotsu ramen made from pork bones boiled for a long time. The basic tonkotsu ramen can be ordered with added chashu and egg, and the broth richness and amount of green onion can be chosen. On a weekday lunch visit around 11 a.m., the wait outside was 20 minutes, and after ordering at a vending-machine kiosk the food came out within 7 minutes. The open kitchen and ducts show grease buildup, which is uncomfortable for anyone sensitive about hygiene.
