Gwen is an upscale steak restaurant a 10- to 15-minute walk from the Hollywood strip in Los Angeles. It serves medium rare steak, New York strip, and lobster ravioli, and diners look over a water menu and choose their own steak knife. On days when reservations are full, arriving at opening time can get you a seat at the bar, and at the chef's table you can ask the cooks questions.
