Fluteflute

Flute Flute is a bar in Kitashinchi, Osaka that serves champagne alongside hundreds of kinds of soy sauce. Scallops are paired with fish soy sauce, mozzarella and tomato with smoked soy sauce, and the final egg rice is eaten by choosing a different soy sauce for each spoonful. The owner, a former Italian and French chef, proposes two-stage pairings that change the soy sauce for each dish, and pasta is seasoned with soy sauce after the noodles are drained. The bar format centers on drinks and pairings rather than a full meal.
