Hanbang Tongdak Gui is a whole-chicken restaurant in the alleys of Sindang-dong, Seoul, where chickens are roasted over oak firewood. The chicken is not fried, and it is served with glutinous rice. The firewood is burned in front of the restaurant and the chicken is grilled directly, so the oak smoke rises from the ordered bird. The meat is dry rather than moist.
