Sushi Kimae is an omakase restaurant in the basement of Doosan We've in Seoul that serves hoe and sushi. The courses come out in sequence, with options including otoro, eel, rolled egg, and uni-dong. It has counter seats around a central kitchen and tables, and lunch reservations fill up, so booking ahead is required. The thickness and quality of the neta fall short.
