Insa Shabeujeong

Insa Shabjeong is a small shabu-shabu restaurant in a converted hanok in Insadong. It serves seafood and vegetables, with individual pots per person so each diner cooks to their own taste, and vegetarian options are available. The cabbage pancake is crisp, the vegetables are crunchy, and the broth is clean. It sits at the end of a pedestrian-only alley, which makes it hard to find the first time.
