Chimsachui Noodle is a Chinese noodle shop in Hapjeong, Seoul, serving Hong Kong-style beef brisket noodles and fried dumplings. The clear, rich broth comes with a separate spicy dadegi sauce to mix in, and the fried dumplings release juice from their crisp shells. Arriving around 11:30 a.m. means being seated right away, while the lunch hour brings a small space and a possible wait. Each bowl is made with more beef brisket than noodles.
