Ichiran Hakata

Ichiran Hakata is a tonkotsu ramen shop in the basement of Sunplaza near Hakata Station. Bowls come with chashu and noodles in a rich tonkotsu broth, and orders let you choose spice level, broth richness, noodle firmness, garlic, and green onion. Seating is in one-person booths, and orders are placed through a Korean-language kiosk and order sheet. Weekend lunches can involve a 20- to 50-minute wait, and the indoor ventilation is poor enough that the smell lingers.
