Katsuyoshi Nihonbashi Ningyōchō

Katsuyoshi Nihonbashi Ningyōchō is a tonkatsu restaurant near Ningyōchō Station in Tokyo that serves rosu katsu and hire katsu. Customers choose the weight of the meat, which is then minced and fried to order. At lunch, the wait can run about 30 minutes, and the open kitchen lets diners watch the cooking. Rice and miso soup are ordered separately from the tonkatsu.
