Hortensia is a one-Michelin-star French restaurant in Ginza. The chef serves creative dishes built around regional ingredients. The restaurant takes its name from the hydrangea, a flower made of small petals, to express a wish that the staff, the restaurant, and its guests each do well in their own place. Staff explained the food to Korean guests using a translation app and showed them the steak being cooked.
