Ajino Sanpei is a miso ramen shop on the fourth floor of a stationery and bookstore building in central Sapporo. It serves a light miso broth topped with minced meat, bean sprouts, and thick, chewy chijire noodles. Known as the originator of miso ramen, the shop had customers waiting before its 11 a.m. opening, with a wait of about 30 minutes. The broth becomes saltier and heavier toward the bottom of the bowl.
